Honey is the main product of the hive, produced by the cumulative effort of thousands of bees who gather nectar from various flowers. This nectar is turned to honey by reducing the moisture to 18.3% or less. When the honey is at this moisture or less, the bees place it in honey comb and place a white cap over it. This signals the beekeeper that the honey is ready to be extracted.

Because honey is created from flowers, every type has a different flavor. Therefore, if I extract several times a year, I may have several different types of honey. The color is also different, and, as a rule, the darker the honey, the more intense the flavor.
